Haha. Ok.

Another of my cheesy food posts. I bought some organic ground beef (a few packages) that expire tomorrow. It was on discount and I froze the other two. I made the classic...day I say...cult classic meatloaf.
There's nothing too special about this meatloaf, save the fact that it's dairy and gluten free.
Here are the approximate ingredients:
Cult Classic Heart-Shaped Meatloaf
1 lb organic ground beef (lean)
2 free range eggs
3 slices of slightly dried out GF bread (I used EnerG foods (sp?)), crumbled into small pieces
1 tsp salt
pepper
1 tbs herbs de provence
1 tbs organic yellow mustard (or mustard of your choice)
3 or more tbs organic tomato paste (I used a small metal tin of tomato paste--I used half in the loaf, half to coat the outside)
Ok...I did one more thing which is sort of funny and probably unnecessary--but I added a few tablespoons of pineapple juice (I dunno why--just curious if it would make a difference). I did it because I'd already opened the can of pineapple for Pele and I had the reserved juice.)
Gently combine ingredients with spoon or hands, etc. Pat into a nonstick heart-shaped pan (for no good reason), then combine: the reserved tomato paste (3 tbs or so) with a couple tbs of water and agave nectar (each), and a sprinkling of salt and pepper. Spread over the raw heart-shaped meat and stare in wonder at the grotesque display. Then apply gratuitous smiley face with mustard. Place in oven.


Bake at 350 for about an hour...or follow your meat thermometer's recommended temperature for beef if you're paranoid. I find that meatloaf tends to take about an hour, give or take. This one is fairly moist because of the extra liquid.
Dig in, morbidly, ferociously, carnally, with oversized fork or knife.

p.s. I'm not truly infuriated--I just liked the way this face looks.
Verdict: I tried the meatloaf after it came out of the oven and I like it! It's always a toss-up with recipes I haven't tried, but meatloaf isn't that complicated. It's moist and uniform in texture with a nice herby flavor and a tomato-y top.
