Hi Folks,

I just felt like posting. I'm about to host a dinner over at our house (aka the Crystal Court'yard') and I'm waiting for my parents, siblings, grandmother and husband to get home (in about half an hour). What better way to use that time than post about this strawberry-mint cooler? Ok, don't answer that. There are many other things I could be doing but I've been a cookin' and a cleanin' and such so why not.

This is very simple and very refreshing. I hope you try it. It's perfect for the month of July, or August...or whenever. A bonus is that it's dairy free, gluten free, refined sugar free and fresh-tastic.

(Pictures of the finished cooler will be attached later--I won't actually make it for another 30 minutes or so)

Strawberry-Mint Cooler

Ingredients:


Handful of mint, leaves only (mine is apple mint from the yard--but you can use whatever you like)
1 cup or so (give or take...this is flexible) strawberries (ours are from the garden but obviously any will work, including frozen)
1 cup or so of ice (depends on how much you're making for all these amounts) If you use frozen strawberries you might be able to add less ice. I actually made a large batch and used probably 2 or more cups of ice. I like the texture of it.
Enough water to make it the thickness you want. It should be fairly light. It's not smoothee thickness. It's more like a watery slurpee. I know that doesn't sound very appetizing but it's good. It's icier than a slurpee, and less sickeningly sweet.
Agave or other unrefined sweetener to taste (a few tablespoons, more if it's a big batch)

Procedure:

Blend until well combined and mint is chopped up into teeny tiny pieces/flecks (you don't want to choke on it)
Drink it!
